Frische Pasta (V)

There are far better descriptions of how to make pasta on line, from other people. I include this for the sake of completeness for my other recipes.

 

One portion of pasta (serves one as a main course)

100g plain '00' flour

1 large egg, beaten

 

Mix together the flour and eggs with a generous pinch of salt until it forms a dough. Knead until pliant and silky, for about ten minutes. Cover with clingfilm and leave in the fridge until ready to cut into shape (for at least half an hour).

 

Remove from the fridge and pass through a pasta machine, on a progressively thinner setting, until you reach the desired thickness.  Cut into the shapes you want, place on a floured board or for long pasta, hang it over a horizontal rod, or similar.

 

Cook in boiling salted water until done - usually not more than a few minutes, depending on shape.
